OH SO SWEET LEMON DELICIOUS

I was flicking through a glossy magazine a couple of months ago when I stumbled across this oh so sweet lemon delicious recipe. Being a sweet tooth queen,  I had to find out for myself just how delicious this dessert really is. Well after eating half the mixture along the way and taste testing more than a few, I can safely say they are beyond delicious! Jam jars with sweet little bows add the perfect trimmings to this tasty treat. Ideal for a picnic in the park, a dinner party dessert or an afternoon tea with the girls, this lemon delicious recipe is both yummy and super cute!

LEMON DELICIOUS 

Makes 7-8

Ingredients

  • 90g butter
  • 105g flour (I used gluten free flour)
  • 300g caster sugar
  • Zest & juice of 3 lemons
  • 4 eggs
  • 450ml Milk
  • Icing sugar to serve

Instructions

  • Preheat the over to 140’C
  • Cream the butter and 200g of the caster sugar, then add the lemon zest.
  • Separate the eggs, reserving the whites, then add the yolks to the butter and sugar, mixing well
  • Gradually add the milk, lemon juice and flour, mixing well after each addition, until the batter is smooth
  • In a separate bowl, whisk the egg whites with the remaining 100g of caster sugar until soft peaks form, then fold through the batter
  • Divide evenly among clean jam jars
  • Place the jars in a baking tray and fill the tray with water to a level ¾ the height of the batter in the jars
  • Bake for 30mins, then turn off the heat and let them rest in the oven for an hour
