With the Valentines Day buzz sweeping around all week, I thought I had to jump on board and spoil the one I love.  It’s not something that is hugely celebrated in our house, however I have a weakness for sweets and treats and this is the perfect opportunity to bake something delicious, all inspired by love of course! So I decided to whip up some Mixed Berry Buttermilk Muffins, all for my husband (with the idea in mind that I would be able to enjoy these treats too)! I hope you all had a lovely Valentines Day.

Mixed Berry Buttermilk Muffins

Preparation time- 5 minutes

Cooking time- 20 minutes

Makes 12

  • 2 ½ cups (375g) Self raising flour (I used gluten free flour)
  • ¾ cup (165g) caster sugar
  • 1 egg, beaten lightly
  • 1 teaspoon vanilla extract
  • 2/3 cup (160ml) vegetable oil
  • ¾ cup (180ml) buttermilk
  • 200g frozen mixed berries
  • Vanilla or Berry yoghurt
  • Fresh strawberries
  1. Preheat oven to 180’
  2. Grease 12 hole muffin pan
  3. Sift flour and sugar into large bowl; stir in remaining ingredients and mix well
  4. Spoon mixture into holes.
  5. Bake uncovered for 20 minutes
  6. Serve warm with a dollop of yoghurt or ice cream and some fresh strawberries
